Bacon Wrapped Clam Cups

  1. Shape bacon into mini muffin tins and bake at 400 degrees F for 20 minutes
  2. Chop the clams into small pieces. In a sauté pan, sauté minced garlic in olive oil for a few minutes. Add sauteed onion and combine. Then add the panko and toast well
  3. Transfer to a bowl and add clam juice to bring the mixture together. Then add lemon zest and juice, diced roasted red pepper, and parsley. Add salt and pepper to taste
  4. Spoon into the bacon cups and top with microgreens
